
20. Peel. The peel is a wooden shovel used to put the dough into the hot enough oven and then to take out when done. In Tihany the oven was fed with blackthorn, collected from the fields or stumps (the shredded central part of the corn crop) locally called „üszék”. „Baking was always done at the crack of dawn. “When morning came the small breads made of leftover dough, called lángos or langalló were done and we ate them with a drop of fat and garlic.” – remembered Aunt Lidi about the traditional use of kitchen ovens.
